Cod Stew
I created a yummy Cod Stew today.
I could not find a recipe that was gluten-free and dairy-free online, so here is mine.
Ingredients Serve: 4
• 1 pound of cod, skinned, boned & cut into bite-size pieces (or pre-cut cod frozen @ Trader Joes grocery store)
• 1 tablespoon olive oil mixed with hot pepper seeds
• 2 large onions, 1 chopped, then other in large sections
• 2 (19-ounce) cans diced tomatoes
• 1 teaspoon chopped garlic
• 1 teaspoon basil
• 1/2 teaspoon salt
• 1/8 teaspoon black pepper
• 1 can black beans
• 3 large carrots sliced 1/8” thin
• 1/4 cup frozen chopped mango
• (Optional) 1/2 teaspoon crushed dry chili pepper
Thank You Faithful Readers!
I apologize for being off-line most of this week.
Despite my best intentions, when I returned from vacation I was greeted by a deluge of work, including:
– 208 response needed emails in my work inbox
– and a 15, 12, and a 28-hour workday.
We will resume next week with lessons I learned in Hawaii, followed by a series on the fear of failure.
Back from Vacation
Mysilentscream readers, a restless night sleep led right into twenty hours in airports or on one of three flights.
One brief fitfully slept nap later, I’m exhausted from our vacation.
(Insert mocking laughter here)
I’ll get some rest and be back tomorrow. Thanks for your readership!
Scott
It’s my birthday today…
… so I’m not writing, I’m soaking in the love!
My debut blog
How do you start blog entitled mysilentscream?
It sounds like a bastion for the emo, morose or the passive-aggressive. If that’s you, welcome! If not, don’t go away yet!
I plan to rant and rave throughout mysilentscream’s lifespan. So where do I begin?
At the risk of alienating many of you, I’ll reach into my heart.
I have learned joy, and sorrow, the promise for tomorrow and the dashes of hope for today. I have learned to persevere and I’ve learned to be a realist. I have been crushed with disappointment and been propped up for another day.
Props
Hard core props to Jeff Prentiss — gamerjeff.com to the rest of you — Jeff, you know why.
Thank You!
A quick shout out to each of you for stopping off at mysilentscream.
